4 Large Beets
2 Tbsp Organic Butter
1 Tbsp Sea Salt
Using a madoline, slice the beets thin. Place on baking sheet and drizzle with melted organic butter. Add a dash of sea salt. Bake at 400 for about 1 hour. Enjoy with a salad at lunch or dip into fresh guacamole or salsa!
Another Easy and Delicious Recipe! Zucchini Pasta with Avocado Sauce.
2 Large Zucchinis
Spiralize the Zucchini and enjoy fresh or very lightly boiled. For sauce, simply blend the avocado and add juice from the lemon. Grate in fresh garlic and toss with the zucchini pasta.
